Another issue, I'm not sure if there is a relation to the one above: The
preview window is looking weird, see attached screenshot.


A fisheye with a field of view of 220 deg looks "fishy". A fisheye should
have a hfov < 180 deg. (Except there is essential black border in the
images.)
Maybe another lens projection works better for your cam/lens.  But without
suitable images it's difficult to say.

I'd say the preview is compatible with a fisheye that projects only a smaller circular image onto a rectangular frame and therefore requires a circular crop. Maybe you omitted that step. Vignetting shouldn't be an issue -- hugin compensates that.
What enblend issues did you see?
