I often fall into trouble because of Emacs and Gnus.

What does Guix offer to backup e.g. every 2 days my Emacs
configuration so that in case of trouble with Emacs or Gnus my Emacs configuration, including gnus is saved and I can come back to it? [...]

I don't know about guix specifically, but in case it can be useful, I have emacs do backups of the last 199 versions of each document it saves, including the literate configuration files. In my case, emacs.init just calls 3 literate config files:

- a general emacs one (repos, variables, helm, agenda, custom scripts, etc.)

- another for mu4e (the MUA I use), and

- a third one for org-roam.

All of those are in a Nextcloud directory, so all versions are saved. It saved me more than once... ;)
