I do like the idea of preserving things by default, but maybe it's just we didn't explain things properly if at least 2 people had trouble with it.

When a default value cannot be found that suits everyone (as may happen here), maybe it's value must be defined at some previous point, like when installing. As a possible exploration -and in a very hypothetical situation- when you install guix there is a question with some brief contextual help that leaves a value for the system about how many generations to retain by default.
Which, of course, can be changed later at any moment. :)
