On OS X Snow Leopard, this launches a cmd session (which BTW
isn't equal to DOS support per se), and the result is a window
where I can see a blinking cursor and everything appears in
black on black background. It seems to work for basic
commands (like 'exit'), but I can't see anything.

AFAIK it's impossible and WINE cannot be used to execute
DOS applications.
Are you sure that you eve executed DOS binaries using WINE?
What file shows for such binaries?
