ESR and other well known names are contributing to projects using LLMs, including Emacs[1]. I highly doubt Guix does not already have drive-by contributions where LLMs were used. The practical problem is that we likely cannot reliably detect LLM use, which raises the question of whether a policy is enforceable at all. If the concern is code quality, that is already addressed by review. If the concern is copyright, that is a separate and more specific discussion worth having, not by us but lawyers.
