With regards to your first problem, I can't really say, since I don't have that problem. I wonder whether you set the GnuCash file up with GBP as the default currency.
As for the second issue, the tutorial explains the behavior of the Description column at 2.9.2.3 (https://www.gnucash.org/docs/v5/C/gnucash-guide/chapter_txns.html#txns-register-oview).
