What version of Linux Mint are you using? The current version is 22.1 -

I would agree with David that the Flatpak version of GNUCash is the best
way to use GnuCash on Linux Mint -
https://flathub.org/apps/org.gnucash.GnuCash  

While I would not recommend downgrading versions of GNC, if that is
really what you want to do, here is the FAQ section of the GNC Wiki -
