I don't know if it'll help you but I just took the GnuCash data file
that I'm using on Win 10 and loaded it into GnuCash on my wife's laptop
running Linux Mint 22.1 (Wilma) with no problem. The version of GnuCash
on her laptop is 5.5 and was installed using Software Manager. I would
point out that the data file was originally created on her laptop and
QIF files imported there (due to the broken import issue with GnuCash
5.10), then copied over and opened on V5.10 on my Windows 10 PC. As a
test, I did however create a brand new data file on Win10 today
containing just the standard default accounts, saved it, then loaded it
into GnuCash V5.5 on the wife's laptop and that also worked with no errors.
It looks like you need to get to Mint 22.1 or at least get your Linux
install of GnuCash up to 5.5 somehow.

I think flatpack is probably the best way to go. The instructions do
look a bit intimidating I agree. As long as you make sure you have
secure backups of the GnuCash data files you can't really get into too
much trouble though.
I use Linux but not Mint so I'm not the best person to help with
details, maybe there are Mint users here who can help some more.
