Actually it's each time you *open* a file.

It goes in the same place you told Gnucash to put your data file, so if 
you put that somewhere else (Documents/Finance ?) then that's where the 
log files will go.

Edit->Preferences->General lets you turn off backups and logs altogether, 
if you're sure you'll never make a mistake or have a system crash.
