There you will find links to both documents (the Guide and the Manual), in a variety of formats (online, PDF, epub, mobipocket) and in a variety of languages (English, German, Italian, Portuguese, Chinese (simplified), Japanese.     2. I would like to be able to make entries for "Paid in Capital."  How
    do I get started making an entry?  I have reached the point in the
    screenshot below, and am not able to go further.

As Michael Novack points out, this is an accounting question rather than a GnuCash usage question. GnuCash is a tool for performing double-entry accounting, but it neither insulates you from the fundamentals of accounting nor teaches you it. Learning enough accounting to be able to track the information you want, and decided what is worth tracking, is up to you.
