How are you running Gnucash?  Try "flatpak run org.gnucash.GnuCash" in
terminal - this should force it to run the 3.7 flatpak version you have
installed.

My shortcut to run the flatpak version is
in /var/lib/flatpak/exports/share/applications if it helps...
