I agree with the essence of Stephen's reply: gnucash does accounting. If you need a layer of encryption to protect that, you'll have to find a solution that supplements it. There are plenty of tools on all common platforms that allow you to set up an encrypted directory. If the privacy of your data is important to you, you can use something like that. Or store your data in a mysql or postgresql database. Both allow you to set a password.
