GnuCash already has an option in the user preferences for the XML data file to be stored in compressed form (zipped) on the hard disk. It is automatically zipped and unzipped by gnucash in that case. It may be the default but I'm less sure about that.
Just copy it to a backup location as required. One could also zip the directory with the data files and include the gnucash generated backup and log files (which can be replayed from a previous backup) using a cron job (or similar in Windows). Some of us prefer backups not to be individual program initiated as we often back up related information created with other programs.
