Patches between versions

Would it be possible to produce patches to get between
version 1.2.4 and 1.2.5 for example?

If I do a cvs download, how much download will that be
approximatly and will it be better or worse than a 
tar.gz?

(Looks like I'll need the cvs version if I want heirarchical
accounts and double-entry accounting).

How long before the cvs version will be considered stable.
Is it even a goal yet?
