I love the idea of storing as much content as possible in git.

We currently have a mediawiki powered wiki which has served us well.

However it lacks:

- The power of Git versioning, which IMO is better then the mediawiki
 history

- The workflow of Git to make changes

- Most importantly, an easy way to manage page access controls.

It seems Gollum, at least Gollum DTG [1] supports an easy way and secure
way to manage wiki page access.

The access example is detailed here[1].

Anyone know if this possible in GitLab too?

Ideally, I'd want to replace something big and complicated like
Confluence and be interested to hear what others have done using a Git
based wiki.

Perhaps it's not there yet?
