I just got it working with both TIF or JP2...
The issue was JAI native library:

As it was recommended everywhere for production performance I installed
it. May I suggest opening an issue against documentation ? If this
library cannot handle granule transparency I wouldn't recommend
installing it.
Here is how I did the install (If you want to test it yourself Daniele):
