Martin, I'm not a huge expert with this part of Geoserver, but as nobody else has answered, you may try reading http://docs.geoserver.org/stable/en/user/tutorials/image_mosaic_plugin/imagemosaic.html and taking a look at the backgroundValues configuration option.
