Well I am not sure, but maybe there is a way of adding more space on your appliance, if neccessary. The idea that strikes me, is you could use your current appliance as the Gentoo-life-system and you install a new machine in that free area, chroot to it and work further. Really the classical fresh gentoo install way. You could work and experiment on that new partition without breaking your working appliance.
