today I was looking for a Jabber server implemented entirely in Java,
and the only results
that I got was this:

Not like the list you've quoted indicates scarcity in the XMPP server space ;-)

Does anyone (besides me) think that we can build something better?

As always having an Apache-licensed alternative to a GPL'd versions is great, so good luck with this effort. Hopefully people who need to embed such server in their products would take note and join.
