You can install APKs directly to a disk image by placing the .apk file in
the /system/app directory. This has worked for me in the past. However,
installing them doesn't guarantee that gem5 is able to run them.

Angry Birds is a proprietary piece of software and the apk is only
available for Android through the Android Marketplace as far as I know.
Hypothetically, you could download this apk from the marketplace and then
use adb to extract it from the phone/tablet/other Android device. But, I
would never advocate such things, as they violate Google's user agreement...
