For starters, you should work from probably base your custom ISO on the new 1.3 release. It is much easier to build and customize than 1.2. It is especially easier when comes to creating the CD ISOs. There a couple of minor things that still need to be done on 1.3 before release. But hopefully, it won’t be too much longer before RC2 ships. To get started, follow the instructions in the Wiki at https://gitlab.com/FreeDOS/builder/wikis/home <https://gitlab.com/FreeDOS/builder/wikis/home>. This is the process used to create the Official Release Media and has been nearly completely automated.
