I've tried this but the biggest challenge was the touch point.  Fingers
tend to be not as accurate as mouse pointers.

What I was thinking was a hybrid interface that would include a base set
of colours and then the sliders to fine tune them.

Having said that, does anyone have any other proposals or components to
test?
