If anyone is ever in doubt about this, then look at the mail headers - every single "Received:" header is a machine that has seen your email. I run machines that act as mail relays (not open ones of course!) and I *know* there are directives in the MTA software to syphon of every single mail and store them somewhere and there is no trace left in the headers that it's been done.
