Hi all! I found the solution. The problem was that the ubuntu binaries of evolution do not contain the exchange configuration plugin, so there is no way to change the OWA_URL conf. I wrote it directly in gconf and now everything works fine. The problem is thus in the ubuntu packages, not in evo itself. Thanks for all the help!
