You can tow an EV with a PM motor as long as the inverter is switching. Like in a Tesla this can be done by turning on the car and putting it in N. The danger is if for some reason the car turns off, then you'll have a bad time. For an Aptera, you might be able to just add a manual disconnect to 2 of the motor legs.
