Wouldn't it depend on how much they charge per hour, or per KWH? Nobody steals parking meters. There isn't enough money in them to make it worthwhile.

At $0.10/KWH, a 10 KW charging station is only costing $1/hour for electricity. An EV that uses 300 WH/mile gets 33 miles of charge for each hour parked.

You seem to be forgetting most of the costs, and profit that such a system would include. I'd bet it would charge at least $0.50/KWh.  Also note that we are talking DC Fast Charging, not J1772.  Stations will be 100KW and up.
So a busy station could accumulate significant funds in a day.
And don't think that thieves will actually worry about how much they get when causing $10,000 damage to a site.  If they make $50, it's worth it to them.
