Not just the finish - Problem with wood is it changes colour by itself. I've got some nice maple here for guitar bodies and necks. It darkens on it's own. Doesn't matter what finish you use, the colour will change over time. Some woods and finishes lighten under UV, some darken. Look at any old furniture, drop or sliding leaf tables show it particularly well, Walnut and Mahogany darken, Oak goes gray. I've got some nice spalted Sycamore that I used on the back of my Thinline Telecaster I made and it's darkened quite a bit in only 4 years and it never sees daylight - It's either in a case or in a bar :) The off cuts have darkened too, so it's not just the Nitro finish.
