Well, that put me on the right track. I wasn't looking for a persistent custom search command, just one I could execute ad hoc, since sometimes I'd be looking for tigers and sometimes for bears, etc.
But with this to go on, I found that C-c a m species="tiger" does what I want. Previously, my problem was I was not using the quotes.
