If you look carefully at the messages buffer, you will see:

*Exporting to LaTeX [exporter: latex]...*


*Calling org-latex-export-to-pdf=> Scripts used in document: (cyrillic)*

So there _is_ this message for character sets outside latin-1.

I'm refining the documentation and implementing :fallback as a plist

However, I'm looking at the possibility to enhance this output when
post-processing the LaTeX output.
