Maybe we can drop these two passages as font configuration is described
later, in dedicated sections. In "Handling different languages in LaTeX
exports" we can simply add a paragraph that non-english languages most
likely need specifying fonts and then refer to Controlling the font
configuration for LuaLaTeX and XeLaTeX.
More generally, I feel that "Handling different languages in LaTeX
exports" is too similar with =LATEX_MULTI_LANG= keyword description.
What about shortening that description to
The strategy to handle multi-lingual features. Possible values
are ~nil~ (default), ~"fontspec"~, "~"polyglossia"~ or ~"babel"~.

And merging the rest with "Handling different languages in LaTeX
exports" section text?
