I'm against moving to `luatex' as the default compiler.  I'm decently familiar
with LaTeX, having used it to write papers and even my resume.  I just tried
to compile a relatively simple LaTeX file using `luatex' on my Fedora Linux
machine with the `texlive-full' package installed.  I got a bunch of errors,
having to do with missing `fmt' files and various ini files being misconfigured.
The same document compiled with `pdflatex' produced a PDF file and no errors.

In other words, I don't think we can count on users to have properly configured
LuaTex installations if they've installed TeX packages from their Linux distro's
package manager.  Swapping the default compiler would likely break these users'
usage of LaTeX inside of org-mode.  I think it's fine to leave `pdflatex' as the
default and document how users could switch to LuaLatex if they wish to.
