In hyperref you have
\pdfauthor, \pdftitle, \pdfcreator and \pdfproducer.
You normally don't touch \pdfproducer, because that is the responsibility
of the LaTeX compiler.
But you can set that to
\pdfproducer={}
 to produce an empty field and hide which LaTeX compiler is producing the
PDF.
