Yes, you may test it with 2 cables from the same power supply.
When the manual says 'Turn off the low/high current power supply', just unplug the cable instead.

The tests are to assure that the the K2 senses the power supply shutdown and that proper messages are displayed with the various combinations, it is not a test of the power supply itself.

There is no advantage to connect both the low and high current cables to the power supply for normal operation - because if the power supply goes off, there is no power anywhere. The auto switching will only take place if two separate power supplies are used - preferrably with the low current supply coming from a battery backed-up source - that will keep you on the air even if a power failure has occurred.
