the language names are not part of the i18n catalogue.
They come from:
https://docs.oracle.com/javase/7/docs/api/java/util/Locale.html#getDisplayLanguage()
For example in the jspui it is used here:
https://github.com/DSpace/DSpace/blob/dspace-5.4/dspace-jspui/src/main/webapp/layout/navbar-default.jsp#L133

These strings aren't from DSpace, they come from Java's Locale class.
