Under Nominet, .uk domains have a thing known as an IPS tag or a 
registrar tag or just a tag. It is a text string that identifies the 
registrar for the domain. "1AND1", for example.

    $ whois hadrian-way.co.uk | grep Tag
            1&1 Ionos SE [Tag = 1AND1]

In order to transfer a domain to a different registrar, you have to 
change the tag.

AFAIK, .uk domains are unique in using tags like this.

Normally, the old registrar should change the tag. There is normally 
an option for changing the tag in their control panel interface. 
Alternatively, you can ask Nominet to change the tag, by using your 
Nominet online services account.

So, the process for transferring registration of a .uk domain to a new 
registrar is, roughly:

    1. Sign up with the new registrar, requesting to 'transfer in'
       your specific domain. The new registrar will set up your
       account and billing details. Then they will tell you what their
       tag is and wait for the domain to be released to them.

    2. Change your domain's tag to that of the new registrar, which
       releases it for transfer to that registrar. It is important to
       be accurate, else control will pass to the wrong registrar or
       none.

    3. If the tag was input right, the new registrar will now have
       control of the domain. When their systems detect the change of
       tag, they will activate your new services.

    4. At some point, the old registrar will deactivate your old
       services. There will normally be some overlap, to avoid
       downtime.

Depending on the registrar, you may be able to set up some aspects of 
how things will work on the new registrar before the transfer is 
initiated, so that it starts working how you want it as soon as the 
transfer is complete.

Regardless of whether they do everything for you or you are doing it 
all manually, you'll still need to change the IPS tag to authorise the 
transfer.

Ralph has linked to instructions for transferring the domain to 
another registrant, not to another registrar. :) However, I believe 
you can do both of those things using the Nominet account.

It might not be the 'best' way, but I migrated my email from my old to 
my new IMAP accounts by clicking and dragging it from one account to 
the other within KMail! Worked a treat.
