We have lots of tasks where you could be helpful. But, as a first step, please subscribe to the doc mailing list, or you will miss discussions and further answers: send an empty e-mail to doc-subscr...@openoffice.apache.org and reply to the confirmation request you will receive.

The main project we are working on at the moment is the User Guide. You can find draft pages at
http://wiki.openoffice.org/wiki/Documentation/UserGuide
and, since it is a wiki, you can just register and start editing pages. Of course, for any major changes or more information please refer to this discussion list.
