Assuming you start with fresh VMs, all you need to install openvswitch for your needs on Ubuntu is: apt-get install openvswitch-switch
But don't try to install mininet on top of it. You should either try to do everything using openvswitch commands or try to do everything using mininet. If you try to mix and match, you should know both very well.
