The Host sFlow agent ships with the sflowovsd daemon that automatically configures sFlow on Open vSwitch to match the Host sFlow settings (i.e. picking up sampling rates, polling intervals, sFlow collectors, ports etc).
Just run the following command and you should start receiving sFlow from all the physical and virtual ports on the Open vSwitch: service sflowovsd start The sflowovsd daemon will automatically maintain the Open vSwitch sFlow configuration as bridges are added / removed, on restarts etc. ensuring reliable monitoring in production settings.
