If you have a google account you can still turn instant search off in 
the preferences (cog in the top right, search preferences).
Though I haven't really noticed any problem with responsiveness of the 
site at all, I do rather miss the good old days when all you had was a 
search box and two buttons.  I remember when they made what appeared to 
be a slight aesthetic change 5-6 years ago and people got up in arms. I 
did some beer mat calculations and figured out they were saving 
themselves Gbs of bandwidth a minute just by that small change as it 
seemed almost entirely based around making the landing page smaller.  
Mostly I justify my ongoing use of google by the fact that I'm used to 
phrasing my searches in language that is optimized for getting results 
from Google (same phrases often produce wildly different and worse 
results from Bing and Yahoo).
