Eyeball-friendliness matters. Avoiding endianness screwage matters

I'm not insistent on S-records, but experience shows that binary wire
protocols are brittle and an all-too-fertile source of downstream
defects.  If I get to design NTPv5 I will *not* repeat that mistake.

I like JSON datagrams a lot these days.
