Uugh! Someone better tell the Internet, as every blog post, search
engine and chatbot says rpkg is the way to go. :-(
Since that's not possible, maybe a warning in the COPR UI?
Copr supports two other useful methods:
* custom source method - you just wrote a script that produces src.rpm
and save it in Copr form.

That works to build the package and automatically set the version, but
it seems there's no way to automate new builds when a tag is pushed to
the repo.
