How do we want to sign the builds?

"For new releases, PMCs MUST supply SHA-256 and/or SHA-512; and SHOULD
NOT supply MD5 or SHA-1" [1]

My suggestion would be to only supply SHA512.

Signatures and checksums could be generated with:
https://svn.apache.org/repos/asf/openoffice/devtools/release-scripts/hash-sign-512.sh
