What monitors an application opens on is a function of the operating system and perhaps also of the monitor sharing application. Be advised that, although you may be able to cause OpenOffice to open on the ten monitors, only one will have editing rights - OpenOffice is not a multiuser application.
OpenOffice can serve multiple users at the same time. Only a document can only be edited by one user. If the users work on different documents there are no problems in access rights.
