You make a normal installation on the central PC. OpenOffice can be used by different users at the same time. Important is, that these users have different home directories. OpenOffice uses the variable $SYSUSERCONFIG and creates for each user an own directory containing personal settings when the user starts OpenOffice the first time.
If this mechanism to detect the home directory of the user does not work in your configuration, you can manually provide an own space for each user. Ask again if you need that.
You can install OpenOffice on the server and try it. The installation is needed anyway.
