Thanks a lot for reporting this bug, however since Evolution is no longer a part of the default Ubuntu installation, this bug no longer constitutes a papercut.

By default, Evolution's date column should occupy a fixed width just wide enough to fit its contents; furthermore, making the evolution window wider should not increase the width of the date column, leaving more room to increase the width of columns with wider contents (e.g. Subject).
