So there are two instances of ibus-daemon and a couple of other processes, probably because ibus was started both by some gnome package and im-config. Wonder if that might explain why it doesn't work for you. For instance on my system I can either set it to "none", "IBus", or "fcitx". However there is no such option in the gnome-control-center's Region & Language section, though I think that there should be.
