Actually, it worked rather decently shortly after I submitted this post. I'll report back if i have further issues.
The only thing that is a little annoying, is that if you focus on Monitor 1, while full screen with Remmina on Monitor 2, the Unity panels overlay the previously full screen until you click focus back to Monitor 2. This makes sense in one way, but is annoying in another.
