The most common cause of a mistaken default resolution is the kernel randomly not getting enough bandwidth to use the full resolution. This happens if there is an imperfection in the display cable or its connections. So I usually recommend replacing the cables between the laptop and the monitors. For HDMI, try to get an "HDMI 2.1" cable. For USB-C, try to get "Thunderbolt" cables.
