The "unmount" option is misleading, there is already a bug upstream.
Basically they use the same menu actions than for a CD drive (by
example). Your shares are not automatically mounted, the "unmount" is
rather a "stop listing that server bookmark", it's just to drop the icon
you created

For the hang could you get a backtrace of nautilus with libgnomevfs2-0-dbg 
nautilus-dbg when that happens? From a command line:
- gdb -p $(pidof nautilus)
(gdb) thread apply all bt

And copy that to a comment. Maybe you have some network issues? Nautilus
might freeze when you try to browse a location not replying while it
waits for the timeout from it
