For me, this problem started not with the upgrade to Gutsy, but sometime within the last two weeks. For me, however, it's not that the appearance dialog doesn't work, it's display just doesn't update to reflect what you are doing to it.
For now, my workaround is to run: gnome-appearance-properties --show-page=(theme|background|fonts|interface|effects) Note that 'effects' is not in the man page. I can make changes I need to make using that, but I have to remember not to click on a button that would bring another dialog box up.
